  • 28 oz green chile (about 800 grams)
  • 1 tablespoon red chile powder (about 8 grams)
  • 48 ounces canned or fresh hominy (about 1350 grams)

Directions:

In a large pot, combine steak chunks, carrots, salt, and garlic. Cover with water and bring to a boil. Reduce heat and simmer for about 2 hours or until meat is tender and easily falls apart. Add green chile and red chile powder. Stir thoroughly and continue simmering. Drain and rinse hominy, then add to the pot. Cook for an additional 30 minutes. Taste and adjust seasoning as needed. The meat should be very tender and falling apart. Serve hot in large bowls garnished with optional diced onions and a sprinkle of oregano.
