  • ¼ cup (65 ml) vegetable oil
  • ¼ cup (65 ml) melted butter
  • ¼ cup (65 ml) buttermilk or milk
  • 1 teaspoon vanilla or almond extract
  • 1 ½ cups (150 g) powdered sugar
  • 2 tablespoons softened cream cheese
  • 1 tablespoon pumpkin puree
  • 1-2 tablespoons milk

Directions:

  1. Preheat your oven to 350°F (180°C). Grease and flour a 9-inch (24 cm) round cake pan.
  2. In a large bowl, combine the dry ingredients: flour, granulated sugar, brown sugar, baking powder, baking soda, cinnamon, allspice, ginger, nutmeg, and salt. Mix well.
  3. In another bowl, whisk together the wet ingredients: eggs, pumpkin puree, vegetable oil, melted butter, buttermilk, and vanilla extract.
